Sant Ambroeus Hospitality Group is pleased to unveil its highly anticipated new location in Aspen, Colorado, opening June 2025. The newest iteration brings the brand’s heritage of northern Italian hospitality and distinctive culinary vision to the Rocky Mountain region for the first time.

“We opened our coffee bar about a year ago, and are so thrilled to be able to expand our offerings to the Aspen community,” said Director of Operations, Federica Pauli.

Combining the warmth of an Alpine chalet with the modern aesthetic of Milan, the Aspen compound is formed from three main spaces: Sant Ambroeus restaurant, its bar, Il Baretto, and the outdoor dining courtyard that connects the two.

Designed by Giampiero Tagliaferri Studio, the restaurant is located in one of downtown Aspen’s most historic buildings, dating back to 1889 at the height of the region’s silver-mining boom. Inside, sophisticated ease rules: Elements native to the environment juxtapose several vintage Italian pieces, and plush banquets and chairs flank a central fireplace that gives a nod to the brick and stucco building’s original era. Next door in a new, wooden cabin that complements the area’s Victorian structures, the intimate furnishings of Il Baretto’s bar and lounge wrap around a stone hearth topped by a green steel flue.  This Sant Ambroeus location allows for a languid multi-location cocktail and dining experience or a simple aperitivo hour following a day on the storied slopes of Colorado.

Corporate Chef Iacopo Falai focused the restaurant’s menu on elegant Milanese-style cuisine as influenced by and built from the bounty of the surrounding Rocky Mountain rivers and farms. Main courses such as Ossobuco Alla Milanese and Baked Langoustine include sides of roasted Yukon Gold potatoes, respectively, while other dishes such as the Polenta, Fegato e Funghi appetizer feature local wild mushrooms. Seafood features prominently, with raw bar selections and mains of wild caught fish, including Branzino All’isolana and Scottish Salmon. As always, the crown jewel of the Sant Ambroeus menu remains its curated selection of upscale, pasta classics, including Tonnarelli Cacio e Pepe and Rigatoni Strofinati and Paccheri Rosa.

Diners can choose to begin their journey at Il Baretto, where a cutting edge cocktail program marries the sensibility of Italian spirits with the ingenuity of American mixology, offering a set of updated, upscale aperitivo, martini, and classic cocktail options. A variety of thoughtful cosmopolitan bar snacks are also at hand.

The sophisticated yet warm space is available for private parties and events. The stone-floored dining room, with tables and banquets tucked in by surrounding botanicals, accommodates 90 seated guests or up to 100 standing. The intimate Il Baretto, a lovely place to watch falling snow through the street lights on Main Street, holds 38 seated or 50 standing guests. The courtyard, which comes alive with the soft glow of lamps as the sun begins to set over Aspen Mountain, welcomes up to 50 seated or 75 standing guests. The entire compound can host elegant parties of up to 225 standing guests.
