Runamok Maple Skier’s Delights

Skiing all this fresh powder requires a great start to the day. A delicious breakfast is a perfect way to ski through everyone else’s lunchtime and keep getting fresh tracks.

Northern Vermont’s premium organic maple syrup producer Runamok has become a bit of an obsession of mine. They tap over 80,000 trees in the dead of winter and then bring the sap down to the sugarhouse. The Sugarmaker’s Cut is basically their “Premier Cru”. They also have a large selection of infused, barrel-aged and smoked maple syrups.

We’re used to hearing the term “Pairing” when matching wine with food, but Runamok Maple is perfect for ice cream pairing, cheese pairing, tea pairing, vegetable pairings, and cocktail pairings. Get started with your basic french toast or pancakes, but then move on to more creative uses.

My personal favorite is the Cinnamon + Vanilla Infused Organic Maple Syrup. It’s like a trip to a French bakery in every bite.

Here is a recipe I tried the other night to rave reviews:

Runamok Cauliflower Curry

1 entire cauliflower

Runamok Syrup of choice

Curry Powder

Olive Oil

Place the cauliflower on a baking sheet that is covered with aluminum foil. Mix at least 40 ml of Runamok Syrup mixed with 25ml of olive oil and 1 tablespoon of curry powder. Drizzle and massage this mixture into the cauliflower and bake at 400 till soft. Approximately 30 minutes.
