Aspen’s All American: David Burke -Lori Knowles

david_burke_foodWith peanut butter maple bacon dates and fried grapes on his menus, it’s little wonder David Burke’s creations are considered all-American adventures. Now the celebrity chef—whose name is ubiquitous in New York and Chicago—is (ad) venturing westward to ski country. The David Burke Kitchen will debut in Aspen in February, 2014, creating a new space on the second floor of the Colorado ski town’s former Gap building. Matthew O’Neill steps in as Burke’s executive chef, bringing a decade of experience from Boston’s Craigie On Main and The Little Nell’s Ajax Tavern. Still, expect David Burke’s influence to be innate, from the all-American interior—farmhouse tables, leather stools, exhibition kitchen—to the menu’s elk tartar, cheddar grits, and pretzel-crusted crab cakes.
